Welcoming Florentino to the edition Hospitality Family

FLORENTINO

A NEW EDITION BEGINS ON BOURKE STREET

We’re honoured to become the new custodians of Florentino and its four associated venues — The Grill, Cellar Bar, Ombra, and Arlechin — an institution that has shaped Melbourne’s dining story for nearly a century.

We remain committed to the classic sophistication of Italian dining that the Grossi family elegantly embodied while bringing a fresh perspective that will define these venues for years to come.

‘This is a very exciting acquisition for edition Group, and it is an honour and a privilege to be taking over some of the most important and beautiful restaurants in Australia. I aim to build on the unique identities and storied legacies of the famed Florentino.

Together with the team, and with everyone for whom Florentino holds such meaning, our hope is to ensure that this iconic piece of Melbourne’s culinary story continues to be cherished by both long-time guests and new diners for generations to come.

– Rebecca Yazbek, Founder & CEO of edition

To help bring this new chapter to life, we’re delighted to welcome Michael Greenlaw as edition’s new Culinary Director, and announce the appointment of Brendan Katich, current Executive Chef of Reine & La Rue, as Executive Chef of Florentino.

There are no immediate operational changes planned for the venues as we take time to understand the businesses before transitioning, with a refresh to come in the near future.

We look forward to welcoming you and sharing our vision from today. Bookings are available at florentino.com.au or via the link below.
